...since I last posted. Because of a move, I lost my babies. They were set outside in the direct sun in near 100* temps for most of the day. I have yet to order new scobies- $$ issues, you know. Will try to get back to it soon- I miss my KT!
Aug. 2 was the last time I added fresh tea to the brewer. What with work and looking at places to move, I decided to let the KT sit longer. Monday as I was on the phone with DS, he asked when I was going to bottle 'cause he thought it was a bit smelly in the kitchen! I had some over the weekend and it was tart, so I thought a few more days...? Well I bottled last night but left the brewer with enough to keep perking, but did not add new tea. Will do that after the move. In the meantime, It can get stronger so I can have some for the hotel and some for the next batch of tea.
Tried this last Wed. Had the brew bottled and decided I needed more out for replacement space, so took about 1/2 a gallon out, added the elderberry concentrate and set it on the counter as no space in the island. Took this pic today before I bottled it. Just under 4 days for 2nd ferment, and look at that scoby!
... of the continuous brewer yesterday. Bottled 6 and replaced the gallon I took out. Some of the KT bunch @ LCFs suggested a tea concentrate to have ready- just warm and dilute to the desired strength. Sounded like it might work- I just need to do the math (YUCK!) for ratios of conc. to water.
Yep, I started the 5 gal. brewer Saturday and bottled the 2 gal. already made. They will go to the frig tomorrow and maybe the next day the big brewer will be ready to take some out to chill. Started a "hotel" for the other scobies. This is an interesting project, and best of all-- I get to drink the outcome!
